Lady’s finger/Okra and Peanut Stir fry

Okra or lady’s finger is one of the very few veggies my husband eats and I essentially have about 10 to 15 different recipes for this vegetable. We all have certain topics of interest that we pull-out to strike a conversation with someone. My top topic on the list is always food and recipes. I’ve always fascinated listening to food stories and how ingredients are used across many other cuisines. This is one such simple recipe that a colleague shared a few years ago. It was a quick verbal exchange and I don't even know if that’s it. Ever since I first tried it, this dish has been a super hit at home. I love any recipe that calls for simple fewer ingredients.
Long pieces of lady’s finger roasted with ground peanuts!
Ingredients
Lady’s finger/Okra – ½ kg – cleaned and cut into long pieces
Roasted peanuts - 3 tbsps
Garlic – 7 cloves
Red dried chillies – 4
Oil – 4 tbsps
Salt – to taste
Method
Heat oil in a non-stick pan and roast the lady’s finger in medium-high heat until they turn deep brown on most sides.
In a blender, coarsely blend peanuts, garlic and chillies.
Add it to the pan and fry well till the raw garlic smell fades. Initially the paste might form lumps but will incorporate well as you keep stirring. Add salt.
Remove from heat and serve.
